Walnut Flax Cookies

Striving to find a balance of healthy and tasty can be controversial in our household. Depending on who you ask (ahem...me) a cookie can be yummy without sugar, then ask someone else (my husband) and it might be a different story. Our 2 1/2 year old toddler is the biggest critic and if she gives something her stamp of approval by eating it while asking "more, more please" then I claim success

We live in a society drenched in sugar, hidden in secret places and being labeled as unfamiliar terms. I try my best to be aware of what we are feeding our daughter and prefer to prepare her food at home, from scratch (mainly), and limit sweets for special occasions. Her first birthday cake was a homemade vegan cupcake topped with plain Greek yogurt and wild foraged blackberries. Her second birthday was a cupcake with actual icing from our local co-op, but she didn't even eat half of it! So far she's growing up without much of a sweet tooth and I have zero problem with that. I also realize that it is okay to enjoy a sweet treat without feeling guilty! These Walnut Flax Cookies DO have sugar in them, as it helps to balance out the bitterness of the raw Cacao powder. Did you know that raw Cacao powder is a high in antioxidants,minerals, and healthy fats that are good for your heart? These delicious cookies are vegan and small enough to pack in school lunches, perfect! They would go along great with these Tangy Probiotic Snacks!

Walnut Flax Cookies

Wet ingredients:

·         2 Flax “egg substitutes” (2 tbs flaxseed meal and 6 tbs water)
·         1 ½ tsp vanilla extract
·         ½ c organic coconut oil (melted)

Dry ingredients:

·         1 ½ c flour
·         ½ tsp baking soda
·         ¼ c brown sugar
·         ¼ c organic cane sugar
·         ¼ tsp sea salt
·         1 c walnut halves and pieces
·         2 tbs raw cacao powder

Directions: Preheat oven to 350°F. To make your flax “egg substitutes”, mix 2 tablespoons of flaxseed meal and 6 tablespoons of water in a large bowl. Allow to rest for 5 minutes until it reaches a thicker consistency. While that is sitting, whisk the dry ingredients together in a separate bowl. Next, stir in the other wet ingredients with the flaxseed mixture. Now, add the wet mixture to the dry mixture and stir until combined. 


Scoop 1 tablespoon of dough and form into rounds with your hands. Place about 2 inches apart on a parchment paper lined baking sheet. Bake for 10-12 minutes. Leave cookies on baking sheet for 2 minutes, then remove to fully cool. *Yields 2 dozen small cookies*
