Vegan Carrot Cake Muffins

Image
Oh don't mind me...I'll be hiding in a corner stuffing my face with all of these Vegan Carrot Cake Muffins! They are soooo tasty and a great way to sneak more veggies into your (or your kiddo's) diet. Instead of using egg as a binder, this recipe uses an alternative flax meal "egg substitute". Flax meal is simply ground up flax seeds. These tiny seeds are a great source of fiber, Omega-3 fatty acids, and protein! Another treat that I've used flax substitutes in are these Walnut Flax Cookies . Pin this recipe for later!  Vegan Carrot Cake Muffins ·          1 Flax “egg substitute” (1 tbs flaxmeal and 3 tbs water) ·          2 cups oat flour (2 2/3 cups rolled oats) ·          2 tablespoons coconut oil, melted ·          1 ½ teaspoons baking powder ·          ½ teaspo...

Walnut Flax Cookies

Striving to find a balance of healthy and tasty can be controversial in our household. Depending on who you ask (ahem...me) a cookie can be yummy without sugar, then ask someone else (my husband) and it might be a different story. Our 2 1/2 year old toddler is the biggest critic and if she gives something her stamp of approval by eating it while asking "more, more please" then I claim success !  We live in a society drenched in sugar, hidden in secret places and being labeled as unfamiliar terms. I try my best to be aware of what we are feeding our daughter and prefer to prepare her food at home, from scratch (mainly), and limit sweets for special occasions. Her first birthday cake was a homemade vegan cupcake topped with plain Greek yogurt and wild foraged blackberries. Her second birthday was a cupcake with actual icing from our local co-op, but she didn't even eat half of it! So far she's growing up without much of a sweet tooth and I have zero problem with...

Vegan Lentil & Veggie Soup

In September, we officially welcome FALL! This year the autumn equinox lands on September 23rd. How do you plan on celebrating? The weather here in the Pacific Northwest has been cooling off with some cozy rainy days, which has my mind in comfort mode (or should I say my stomach?!) I personally can't think of a better meal than one that involves your crock pot! It's so easy to prep in the morning, throw everything in the slow cooker, then let it simmer away while you go about your business. Welcome yourself home with warm, comforting soup that tastes good and is good for you too! This summer we've been getting a CSA box each week. If you know anything about me, then you know I LOVE veggies! The only time this becomes a problem is when there is an abundance of produce that needs to be eaten fast before it goes bad. I am a big fan of " no veggie left behind " so I decided to put together this delicious, detoxing soup! The fresh garlic cloves contain antioxidan...

Blueberry Hemp Protein Smoothie

Did you know it’s the 7 th annual Hemp History Week (June 6-12)? Industrial hemp is such a misunderstood crop and has incredible potential to improve our country’s overall health, farming industry, textile industry, and economic crisis. Celebrate with me by indulging in this delicious and easy Blueberry Hemp Protein Smoothie! The Hemp History Week website is full of useful information, and talks about the sustainability of hemp, its complete nutrition, innovation, and economic potential.   “Hemp heals Earth. Its long taproot helps mitigate erosion and it has potential to remediate poor soil. As a rotation crop hemp can break disease cycles. It is one of the fastest growing plants on Earth making hemp very efficient at atmospheric carbon sequestration. Hemp’s high pollen content makes it a favorite of bees and other pollinator species, and since hemp requires no petroleum-based chemicals to grow, it does not contaminate the environment.”   Simply focusing on t...
